Them\u2019s fighting words for many, but stick with me as I present my case.<\/p>\n\n\n\n<p id=\"081b\">To understand any city or cuisine requires digging into a heavy baseline of humble spots, mid-range and upscale restaurants. It means tasting everything in numerous versions, to experience a culture\u2019s food expressed from high to low, traditionally alongside forward-thinking menus and \u201cfusion\u201d of cultures on the plate.<\/p>\n\n\n\n<p id=\"1a36\">I have done this, and on all these levels, San Francisco excels. We\u2019ve long remained the mid-range dining master. As NYC excelled in fine dining depth and LA in hole-in-the-wall mastery of every cuisine, neither came close to SF\u2019s decades of casual perfection with superb, often fine dining-level food, drink and service, without attitude or 2 and 3 Michelin-level prices.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/miro.medium.com\/v2\/resize:fit:1041\/1*a5GmCFjutg2BZFd5M3_PAA.png\" alt=\"\"\/><\/figure>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/miro.medium.com\/v2\/resize:fit:1052\/1*-Fd782T8ns50LLZr0o2njg.png\" alt=\"\"\/><figcaption class=\"wp-element-caption\">Photos from&nbsp;<a href=\"https:\/\/www.instagram.com\/p\/CyrQ8hEgSRh\/?hl=en\" rel=\"noreferrer noopener\" target=\"_blank\">State Bird Provisions<\/a>&nbsp;at 1529 Fillmore St.<\/figcaption><\/figure>\n\n\n\n<p id=\"26a8\">The region is home to&nbsp;<a href=\"https:\/\/www.bbc.com\/travel\/article\/20230214-alice-waters-food-revolutionary\" rel=\"noreferrer noopener\" target=\"_blank\">Alice Waters<\/a>&nbsp;and world-changing chefs, to dairies, farms, ranches and beyond that launched the farm-to-table movement in the 1960s and 1970s. Pioneering restaurants sourced local, organic, seasonal and high quality for decades. I had a friend ask why it mattered who did it first if everyone eventually caught on, and a key reason is that the typical standard here is far higher than most any city in the world.<\/p>\n\n\n\n<p id=\"9669\">What is often \u201cthe best\u201d in many cities I visit is the norm here. High quality and environmental standards are in our fiber, common from high to low eateries. We have so much excellence, it\u2019s sometimes years before I can return to many favorites because there are hundreds at the same level of superb. Even basic burger joints feature only grass-fed, organic beef, while dishes that recently started trending in most cities have long been perfected in SF. This means you can find hundreds of remarkable versions, not just a few. Also, as they do in tech, environmental innovations, food, drink, health and everything from transportation to lodging, SF is a city of trend-setting visionaries, not a follower. You often see and taste it here first.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/miro.medium.com\/v2\/resize:fit:996\/1*cbrEys1cNf6toblCdOhIJQ.png\" alt=\"\"\/><\/figure>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/miro.medium.com\/v2\/resize:fit:908\/1*jj8zhPVmRTAbHUughF6S4g.png\" alt=\"\"\/><figcaption class=\"wp-element-caption\">Photos from&nbsp;<a href=\"https:\/\/www.instagram.com\/p\/CvxZWBPs8LM\/?hl=en&amp;img_index=1\" rel=\"noreferrer noopener\" target=\"_blank\">Aphotic<\/a>&nbsp;at 816 Folsom St.<\/figcaption><\/figure>\n\n\n\n<p id=\"b1d8\">But SF is also a fine dining capital with the Bay Area at times holding even more three Michelin-starred restaurants than NYC, a city seven times larger. Los Angeles, at 10 times the size of SF, still struggles to keep up in fine dining \u2014 with Chicago long exceeding LA at that level. Notably, LA is better than ever for mid-range dining, a more recent development of the past 10\u201315 years.<\/p>\n\n\n\n<p id=\"0ea1\">One of SF\u2019s great strengths is certainly also demographics. As the second-most densely populated U.S. city after NYC, SF&nbsp;<a href=\"https:\/\/en.wikipedia.org\/wiki\/San_Francisco#Demographics\" rel=\"noreferrer noopener\" target=\"_blank\">is a deeply diverse population<\/a>&nbsp;living in close confines in tight, walkable neighborhoods. SF\u2019s historic Asian roots are heavily Chinese, Filipino, Vietnamese, Japanese, Indian, Korean, Thai, Burmese and so on; our Latin population dominates with Mexican heritage and also includes rich demographics from Peru and beyond. It\u2019s&nbsp;<a href=\"https:\/\/farmtogether.com\/learn\/blog\/why-california-is-an-agricultural-powerhouse\" rel=\"noreferrer noopener\" target=\"_blank\">one of the world\u2019s top agricultural powerhouses<\/a>, growing two-thirds of all of America\u2019s permanent crops and&nbsp;<a href=\"https:\/\/californialocal.com\/localnews\/statewide\/ca\/article\/show\/36707-california-agriculture-dairy-wheat-fruit-vegetables\/\" rel=\"noreferrer noopener\" target=\"_blank\">half of its fruits and vegetables<\/a>. Much of it\u2019s in our backyard in SF year-round. From winter\u2019s citrus season to the endless of array of tomato types and colors in summer, we get fresh, down the street, superb ingredients that surpass any I\u2019ve had in the world and equal only major agricultural belts like the Mediterranean, though there is far greater variety grown here.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/miro.medium.com\/v2\/resize:fit:2048\/1*osL8FhDhEhYNLZXlmGOR8w.png\" alt=\"\"\/><\/figure>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/miro.medium.com\/v2\/resize:fit:1600\/1*X2fOcFYg9aN9zcrGlNg9aw.png\" alt=\"\"\/><figcaption class=\"wp-element-caption\">On the left: Salad at La Mar Cocina at Pier 1 1\/2 The Embarcadero N, photo by Dale Cruse. A great salad in California makes you sad that most of the world never experiences what a salad could be. As one who eats everything, I\u2019ve had thousands of salads in SF that surpass many of the world\u2019s best dishes in creative, fresh deliciousness.<\/p>\n\n\n\n<p id=\"9e4c\">Hole-in-the-walls greats of every stripe, from Middle Eastern to Burmese, are too numerous to call out. There are&nbsp;<a href=\"https:\/\/www.sftravel.com\/article\/guide-to-san-francisco%E2%80%99s-michelin-starred-restaurants\" rel=\"noreferrer noopener\" target=\"_blank\">39 Michelin-starred restaurants in SF proper<\/a>&nbsp;and&nbsp;<a href=\"https:\/\/sf.eater.com\/maps\/michelin-star-restaurants-san-francisco-bay-area\" rel=\"noreferrer noopener\" target=\"_blank\">50 in the Bay Area<\/a>, out of 88 in all California. As a U.S. city, we\u2019re second only to 7x larger NYC at 71. Progressive and Green Michelin-starred restaurants confirm SF has long led the way in LGBTQ-run and environmentally progressive restaurants, as it has in female chefs. 1970s-80s pioneers like&nbsp;<a href=\"https:\/\/ediblesanfrancisco.com\/edible-sf-magazine\/california-cuisine-pioneers\/\" rel=\"noreferrer noopener\" target=\"_blank\">Joyce Goldstein<\/a>, Judy Rogers at Zuni Cafe, Nancy Oakes at Boulevard, and of course, Chez Panisse\u2019s Alice Waters, have shaped dining globally for decades.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/miro.medium.com\/v2\/resize:fit:700\/1*-nj9_186qCKOuRqtQT7igQ.png\" alt=\"\"\/><figcaption class=\"wp-element-caption\">Photo via&nbsp;<a href=\"https:\/\/www.instagram.com\/p\/Ct5EiDoPVOe\/?hl=en\" rel=\"noreferrer noopener\" target=\"_blank\">Zuni Cafe<\/a>&nbsp;at 1658 Market St.<\/figcaption><\/figure>\n\n\n\n<p id=\"b3d0\">SF has led the way in vegetarian dining, including then-unheard-of upscale vegetarian at&nbsp;<a href=\"https:\/\/greensrestaurant.com\/about\/\" rel=\"noreferrer noopener\" target=\"_blank\">Greens<\/a>&nbsp;since 1979, which launched a number of famed female chefs starting with founder Deborah Madison, and&nbsp;<a href=\"https:\/\/www.millenniumrestaurant.com\/\" rel=\"noreferrer noopener\" target=\"_blank\">Millennium<\/a>&nbsp;since the early 1990s, now in Oakland.<\/p>\n\n\n\n<p id=\"6fc6\">Most importantly, San Francisco has drawn innovative, forward-thinking talent since its birth: trend-setters and visionaries. Chefs and cooks who push boundaries, care about doing things right for the planet and our bodies, who are classically and traditionally schooled to geek levels, passionate about the roots of their foods and culture. And above all, about crave-worthy deliciousness. As I show friends and family thousands of SF spots over these two decades, I always want to take them to places they didn\u2019t try last trip. Yet all come back asking me for dishes they haven\u2019t been able to stop thinking about from visits before. The Bay Area is home to the U.S.\u2019 earliest craft distilleries since the early 1980s and, of course, nearby Napa and Sonoma ushered in New World wine, while SF is surrounded by incredible wine regions in all directions. Don\u2019t get me started on what a world class pizza town we are in many pizza styles, including being the home turf of the great Tony Gemignani (<a href=\"https:\/\/theperfectspotsf.com\/2018\/10\/02\/the-best-bakeries-in-san-francisco\/\" rel=\"noreferrer noopener\" target=\"_blank\">Capo\u2019s<\/a>,&nbsp;<a href=\"https:\/\/tonyspizzanapoletana.com\/\" rel=\"noreferrer noopener\" target=\"_blank\">Tony Pizza Napoletana<\/a>).<\/p>\n\n\n\n<p id=\"7654\">I may sound glowingly profuse for someone who is a non-native. And I am. But I\u2019ve earned it, dining more places than anyone I\u2019ve met around the globe each week, and as I study obsessively, leave no stone unturned, try everything, often to the detriment of my stomach and waistline but to honing of my palate and passion. Having lived in SF 22 years, while traveling half of every single month to eat, drink and judge dining and drink, there is no place I\u2019m happier to return to than home sweet home.<\/p>\n\n\n\n<p id=\"7c6a\">I try not to be biased, though our truly unique, beautiful city could use some pride and realistic assessment in these exaggerated, outsized \u201cdoom loop\u201d scapegoating days. Regional rarities aside, and oft times even then, there are endless dishes and drinks it\u2019s my joy to taste around the globe weekly. Our global food and drink influence from our 1800s infancy to now, far outweighs our size. But at home in SF, I savor them done just as well, often first and better. We\u2019re small, but we\u2019re mighty.<\/p>\n\n\n\n<p id=\"a93a\"><a href=\"https:\/\/medium.com\/@virginiamiller_29308\"><em>Virginia Miller<\/em><\/a><em>&nbsp;is a San Francisco-based food &amp; drink writer.<\/em><\/p>\n\n\n\n<p id=\"a880\"><em>Miller has been keeping spreadsheets for the past twenty plus years and has visited even more than 13k of the top bars around the world \u2014 many with food. The organization has had massive influence on the dining world across continents, including putting&nbsp;<\/em><a href=\"https:\/\/theperfectspotsf.com\/2018\/08\/15\/noma-2-0-the-new-all-vegetarian-menu\/\" rel=\"noreferrer noopener\" target=\"_blank\"><em>Noma<\/em><\/a><em>,&nbsp;<\/em><a href=\"https:\/\/theperfectspotsf.com\/tag\/copenhagen\/\" rel=\"noreferrer noopener\" target=\"_blank\"><em>Copenhagen<\/em><\/a><em>&nbsp;and thus Scandinavia, on the global map when Noma was first named #1 restaurant in the world in 2010.&nbsp;<\/em><a href=\"https:\/\/www.theworlds50best.com\/discovery\/about.html\" rel=\"noreferrer noopener\" target=\"_blank\"><em>50 Best<\/em><\/a><em>&nbsp;has&nbsp;<\/em><a href=\"https:\/\/www.theworlds50best.com\/stories\/News\/the-worlds-50-best-restaurants-2023-no-1-central-lima.html\" rel=\"noreferrer noopener\" target=\"_blank\"><em>illuminated entire regions and cultures<\/em><\/a><em>, as it does cuisines, chefs and restaurants.
